Organ meats are packed full of vitamins and good-for-you things. Our grass-fed beef is delivered once a month. Sometimes our rancher brings us random cuts of meat. This time it was tongue.
* Editor’s Note: My husband has informed me that the tongue is a muscle and not an organ. WHOOPS!
The problem is…I had no idea how to cook tongue. Good thing the hubsters is a professional taco eater. He suggested Tacos de Lengua like the taco trucks serve. Here’s my version of this Mexican favorite.
Tacos de Lengua
- Beef tongue
- 1 onion, chopped
- 2 garlic cloves chopped
- 1T oregano
- 1tsp sea salt
Put all ingredients into a crockpot or pot and cover with water. It looks a little scary, but leave the tongue intact, you’ll remove the skin later.
Crockpot – Cook on high for 6-8 hours. (Our crockpot is old and doesn’t heat to a very high temp, so I cooked for 8hrs)
Pot – Bring to a boil and then reduce to a simmer for about 4 hours until fork tender.
Peel off skin and slice.
The meat is super tender and yummy.
