I am in love with salad. I could eat it everyday and never get tired of it.
The trick is coming up with ways to keep it interesting. Like this one.
Sassy Spinach Salad
- 2c raw spinach
- 2 slices cooked bacon
- 1/2 c shredded sweet potato
- 2T feta
- 1 small/med zucchini chopped
- olive oil and vinegar
Start by loading your salad bowl with spinach and feta (leave out the cheese for strict paleo).
Sauté your bacon on med-high heat until crispy. Remove and place on a paper towel to drain.
Leave a little bit of bacon fat in the pan and saute the zucchini for about 5 minutes until softened. Remove and place on paper towel with bacon.
Put a teaspoon of olive oil into the pan.
Add the shredded sweet potato and sauté until soft and partly crispy. About 5 minutes.
Remove from heat and let sweet potato hash browns cool off while loading zucchini and bacon into the salad bowl.
Top salad with sweet potatoes and a drizzle of oil and vinegar.
*Make this a full meal by adding chopped grilled chicken or shrimp.
