I was super stoked to find out that Trader Joe’s just opened its first Texas store this summer. I took my lunch break yesterday to make the drive and check it out. Farm fresh organic strawberries for $2.49. I love this place! Too bad it’s on the other side of town and 50 miles from home.
So, I made good use of the superfruit and concocted this easy, breezy summer salad. Put all the ingredients together and enjoy!
Spinach Salad with Strawberries
- 2 cups baby spinach
- 1/4 c shredded carrots
- 2 T chopped pecans
- 3 sliced strawberries
- 3oz chopped chicken breast (optional: to make a full meal)
- Balsamic Vinaigrette*
Balsamic Vinaigrette Recipe

Whisk together 1/3c balsamic vinegar, 2T Dijon mustard and a pinch of sea salt and pepper.
Slowly drizzle 2/3c olive oil while whisking.
Store in an old marinara jar or other bottle in the fridge.
